Vidalia Onion Casserole

1 cup finely crumbled Ritz cracker crumbs
½ stick butter, melted
2 T. butter
¾ cup milk
¼ cup grated sharp cheese
2 cups Vidalia onions, thickly sliced
2 eggs
¾ tsp. salt
Pepper, paprika, parsley

Mix cracker crumbs with melted butter. Press into 8 inch pie plate. Sautee onions in 2 T. butter until clean but not brown. Spoon into crust. Beat eggs together with milk, salt, and pepper and pour over onions. Sprinkle with cheese and paprika. Bake at 350 degrees for 30 minutes or until a knife inserted in center comes out clean. Sprinkle with parsley before serving.
