Cowboy Caviar


2 cans corn, drained
1 can black beans, drained
1 can black eyed peas, drained
1 can garbanzo beans, drained
2 beefsteak or 4 roma romatoes, seeded and chopped
1 bushel fresh cilantro, minced
1 green bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
1/2-1 whole red onion, finely minced
~1/2 bottle italian salad dressing
1 lime's worth of juice
(optional) 1 firm avocado, chopped 
(optional) 1-3 jalapenos, seeded and finely finely finely minced 
Combine all ingredients and refrigerate.
Best when made several hours before so flavors can blend. Serve chilled, with tortilla chips.
